Job Description
Amentum is seeking a DFAC Manager to join our team on Andros Island, Bahamas to support the Atlantic Undersea Test and Evaluation Center (AUTEC) mission. Must be able to obtain and maintain a Secret U.S. Government Clearance. Note: U.S. Citizenship is required to obtain a Secret Clearance.
The DFAC Manager will oversee all food service operations in their respective DFAC, to meet the performance requirements and standards herein and be available during DFAC operating hours. This includes, but is not limited to, chefs, dining room coordinators, food service specialists and food inventory control. Coordinates with COTR and Menu Advisory Board for menu planning. Is responsible for the direction, management, and preparation of, and cooking, serving of all types of food served or prepared by establishment. Ensures that food preparation standards are met.

Essential Responsibilities:
- Responsible for the daily operation of facilities that prepare and serve food and beverages.
- Hire, train and oversee of new employees.
- Inspect and ensure that the kitchen is up to safety standards and that staff are obeying health and sanitation policies and requirements.
- Instruct staff based on operations and requirements.
- Manage financial performance to stay within the standards.
- Proper handling of funds and financial management.
- Address complaints regarding food quality or service.
- Order and manage food & beverages, supplies and equipment.
- Order personal protective equipment (PPE) for staff.
- Meet metrics for health inspections, per diem rates and customer comments.
- Manage inventory for spot checks and full monthly reviews.
- Oversee monthly management of food menus.
- Oversee food preparation, portion sizes and the overall presentation of food.
- Manage employee schedules and assign duties.
- Establish standards for personnel performance and customer service.
Minimum Requirements:
- At least 4 years of previous experience in Food Service installation with similar mission/project in scope and nature.
- At least 4 years of Food Service Management experience required.
- Associate's degree or at least 4 of years of experience will be considered in lieu of degree.
- Must possess before start date a Food Protection Manager Certification acquired through an ANSI accredited agency is required (ServSafe Food Protection Manager Certification Program).
- Bachelor's of Science preferred
- Rotating shifts, nights & weekends (flexible schedule).
- Management skills required.
- Culinary work experience and education that demonstrated the obtainment of skills necessary to function in a professional kitchen.
- Must be able to communicate clearly and effectively, both orally and in writing, be able to work long and demanding hours.
- Must be a strong leader and team player and have the ability to give instructions to the lowest levels staff.
- Must be able to mediate staff conflicts especially when stress mounts and tempers rise.
- Supervises the operation of all equipment and supplies, including a large subsistence storeroom plus meat and vegetable coolers. Must requisition all food supplies and equipment for the department and keep accurate accountable records.
- Develops detailed estimates and initial requests for the budget required to operate the food service department and approves the expenditure of department funds.
- Must be able to function in an office setting, answer the phone, use office equipment, etc.
- Excellent organizational and time management skills.
- Strong computer skills, specifically in Microsoft Word and Excel.
- Ability to lift 50lbs.
- Must be able to reside in remote work location with limited medical facilities.
- Valid U.S. passport and driver's license are required.
